Gentil Rosso ancient soft wheat flour, with a low gluten content: suitable mainly for the preparation of shortcrust pastry, but also for bread braking. The cereal comes exclusively from the land of the Bizzarri family, located in a pristine setting inside the Mediterranean scrub. The growing technique does not include the use of herbicides, chemical fertilizers or pesticides, but annual rotations to safeguard the health of the underground. The cereal is stone ground thus preserving intact its vitamin and mineral salts content and then packaged by hand.
