The farm has chosen an eco-sustainable direction, protecting the biodiversity and the cultural tradition of the area. In Poggio Tondo several different types of wheat and vegetables are grown, starting with non-hybrid seeds and capable to keep intact the flavors of the past. They do not use either chemical fertilizers or pesticides, favoring a natural agriculture, healthy and genuine. They produce stone ground flours, artisanal bronze drawn pasta in addition to Tuscan IGP extra virgin olive oil, thanks to the hundred-year-old family olive grove. Recently a hectare of hazelnut trees has been planted, of the Gentile Romana and Giffoni varieties. The heart and soul of Poggio Rotondo is the Bizzarri family, strongly rooted in the territory of the municipality of Scarlino. They grow two varieties of ancient grains, the Andriolo and the Gentil Rosso and an ancient cultivar: the Scarlinese Olive Tree. The farm is also a member grower of CCER (Community of food produced with renewable energy of Tuscany).
