The grapes are manually harvested very early in the morning, they are buffed and cold macerated, at 10°C, for 24 hours. Later the must is separated from the husks with a soft press, and it is left to clarify spontaneously for a few hours, to be then sent to fermentation at temperatures rising from 14 to 18°C. The wine thus obtained ripens on its own fermentation yeasts until spring, and then it is bottled after a light filtration. Bright, straw yellow color with green reflexes. To the nose a wide aroma with intense floral notes, of Mediterranean herbs and minerals. A fresh, dry, soft, well-structured wine and with a long-lasting persistence with an excellent nose-palate correspondence. 0.75L.
