This beer partly follows the footsteps of the best known of the Tuscan dessert wines. The maturation of Birrasanta takes place in barrels already used several times for the production of vinsanto, containing the fundamental presence of the “mother”. At the end of the period of stay in wood, the result is a change towards the elegant notes typical of aging. It has a bronze brown color, smooth and without foam. The olfactory components tell of an aroma prone to oxidative-liqueur characters; evokes hints of baked cake, amaretto, toffee, licorice and tobacco. Light notes of dehydrated figs, raisins and delicate hints of balsamic vinegar. On the palate it is soft and velvety, with a substantial body, with a warm and sweet back that finds its balance with a delicately acidic finish. It goes well with strong flavors such as aged and blue cheeses, excellent in combination with desserts and pastries until it reaches its praise in meditation at the end of a hearty meal. We recommend serving in the snifter, the mignon glass for distillates, at a temperature between 16 ° C and 18 ° C.
